Something a little different, elderflower fritters! This is the 1st time I have made these but it won't be the last.
Elderflowers can be used for the treatment of common colds, flu, sinusitis, hayfever, otitis media, laryngitis, catarrh and catarrhal deafness.
HOW TO MAKE-
I foraged some local elderflowers (check your plant ID) and then de-stem them (which is very important as too much of the stems can cause toxic build up of cyanide in the body, so make sure you do that bit!) Then make a batter from 100g gluten free self raising flour, 1 egg, 175ml sparkling water, 2 tsps of cornflour, and a pinch of salt. This makes a lovely light batter almost like tempura batter.
Take small balls of flowers dipped in batter and put them in some very hot oil. When golden they are ready to serve.
A squeeze of lemon really brings out the elderflower flavour and a little maple syrup sweetens them delightfully!
